Chicken Wings with Root Beer and Yellow Mustard

- 1/4 cup yellow mustard
- 4 teaspoons hot pepper sauce
- 1/2 teaspoon black pepper
- 2 1/2 teaspoons sea salt
- 16 (about 4 1/2 pounds) whole chicken wings
- 7 cups root beer
- Directions
- Preheat the oven to 500 degrees F. Rinse chicken wings under cold water and pat dry. Trim wings and discard. Cut each wing into two pieces at main joint. Place wings in bowl with root beer and let marinade for 30 minutes. Remove wings; drain and reserve liquid. Season wings with sea salt and pepper and arrange on baking sheet; place in oven. Simmer marinade in saucepan over medium-high heat and reduce to 1/2 cup, about 20 minutes. In separate saucepan over medium high heat, reduce root beer sauce to 1 1/8 cups about 30 minutes. While marinade and root beer sauce are reducing, place wings in oven and bake until golden, about 15 minutes. Remove and brush with reduced marinade. Flip wings over and brush with marinade; continue cooking until wings are golden and glazed (about 15 additional minutes). If chicken pieces vary in size, remove smaller pieces and continue baking larger pieces for an additional 10 minutes. Finish the sauce by whisking mustard and hot pepper sauce into root beer sauce reduction; salt to taste.
