Fried Chicken & Gravy
    Ingredients
  • 8 chicken breast halves
  • 1 1/4 cups flour
  • 3/4 cup potato chips, finely crushed
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/8 teaspoon garlic powder
  • pepper, to taste
  • 2 eggs
  • 1 tablespoon water
  • 1/2 cup margarine
  • 1 medium onion, chopped
  • 2 tablespoons butter
  • 1 1/2 cups milk
    Directions
  • Skin and bone chicken; cut into small strips. In a medium mixing bowl, combine flour, chips and spices; mix well and set aside. In a shallow dish, combine eggs and water; beat until blended. Dip chicken strips in egg mixture and dredge in flour mixture; reserve remaining flour mixture. In a skilet, melt margarine over medium heat; add chicken and cook for 10 minutes on each side or until golden brown. Drain on paper towels and keep warm. Add onion and butter to skillet and saute until onion is tender. Stir in 3 tablespons of reserved flour mixture and cook for 1 minute. Slowly add milk, stirring constantly until thickened. Serve as gravy with chicken.
