Peaches & Cream Cheese French Toast
- Ingredients
- 1 (15 ounce) can slice peaches
- 1 1/2 cups light brown sugar, packed
- 1/4 cup butter or margarine
- 6 slices bread
- 1 (8 ounce) package cream cheese, softened
- 2 dashes cinnamon
- 5 eggs
- 3/4 cup milk
- 1 1/2 tablespoons vanilla
- 1/2 cup blackberry or raspberry syrup
- Directions
- Drain peaches, reserving syrup and set aside. Place sugar, butter and 1/4 cup peach syrup in a 9 x 13 baking dish and microwave until mixture thickens. Layer peaches over top of syrup mixture. Spread half of the cream cheese on one side of each slice of bread and lay the slices, cheese side down, on top of the syrup. Spread the balance of the cream cheese on top of the bread slices and then sprinkle with cinnamon. In a bowl, beat eggs, milk and vanilla well and then pour mixture over bread. Bake at 350 degrees F for 25-30 minutes or until light brown. Allow bread to sit for 10-15 minutes, top with syrup and serve. TIP: If using fresh peaches, marinate with sugar, to taste, for 30 minutes before adding to baking dish.
